I personally would like to mention @Crucifer (hopefully its the right tag) who make very beautiful videos.

Alcast is probably one of the top YouTube's out there.
Kevduit spends a lot of time on his videos, and they are very informative, but he turns all of his videos into little skits, doing different voices and acting out some kind of slapstick... just be prepared for a lot of stupid BS and voice changes in an attempt to be funny. Some people like it, I think it's all like sandpaper on my ears.
Deltia was good, but he pretty much gave up on ESO, and even made a video about it. He promised some videos way back, so he did them after morrow, but he made it a point to say he was doing them because he said he would. Not so sure he's in rehab, just playing other games, and trying to work out.

For the new-player/crafting leveling guides, @cainebourneb14_ESO was my go-to. I watched a couple @MissBizz videos while working on improving my weaving/combat awareness, and they were quite good as well.
As with many things, OP, it really depends on what you're looking for.
