for Dual Wield- you can easily do- 5 Spriggan + 5 Hunding (craftable) and 2 pc Veli/ Kragh
for 2H- 5 Spriggan+ 5 Hunding + 1vMA/ DSA 2H (you'd loose the monster set but it's still a solid setup.
if you are facing resource issues- 5Spriggan+ 5 VO + 2 Veli/ Kragh would work nice.

Velidreth is better cause of it proc mechanic
u cant overpenetrate with NMG cause bosses resistance is 18k
100% u wont overpenetrate it in dungeon and normal trial
and in vet trial its barely possible too. vice versa 1 man in raid must be in NMG

That said, with the changes coming up I would go for 1 infused (dagger preferably) since it will help with the 5 piece bonus anyway then just get a precise spriggans dagger from the quest and a precise spriggans bow.

- Torugs infused crusher: 18,8k
- Alkosh: 19,3k

Is that so. Still for gold mats it's about 100k for hardly any.

In all honesty I think the best set for a stam sorc (or any build for that matter) depends on (among other things) how many champion points you have.
For example, I've noticed a lot of people say proc sets are bad for PVE, and it is better to focus on sets that increase raw stats. While this may be true for people that are at the champion point cap, I think a lot of newer players probably read those posts and decide the same must be true for them and end up going with something like hundings instead of something like viper.
Just for fun today I actually compared viper to automaton on a dummy (all other things kept equal). What I found was that until I spent about 400 champion points viper was actually better. In other words, the 1680 dps from viper is actually greater than the dps you get from the weapon damage increase from automation at lower levels. That said, I did notice that right around 400-450 automaton starts doing better and imagine it would do significantly better for PVE players at or near the level cap. But that said, I think proc sets can be valuable for newer players in PVE and am glad ZOS balanced them the way they did with the latest patch.

Red Mountain is probably the best overland choice but honestly the drop rates for those weapons aren't much better and since you are at max level I wouldn't recommend a proc set.
That said, you might also look into joining a guild that has some crafters in it...Hundings is honestly the closest thing to Automaton that I know of and does well with Spriggans and a good monster set...and most of the crafters in my guild will make it for mats. You can also usually pick up a set of hundings off guild traders (at least on PC) if you can't find anyone to make it.
Specifically in your case I'd go for:
2 velidreth (or kragh even though it is getting a bit of a nerf next patch)
5 spriggans (w/ 3 jewelry)
3 hundings armor
2 hundings daggers
and a VMA bow
This will give you the weapon damage bonus on the front bar. The vMA bow will pretty much make endless hail an 11k dot and there really isn't anything else like it, but if you don't want to grind vMA then what you can do is get a Spriggan 1h and a Spriggan bow and then 1 Hundings dagger so you have 5 Hundings on the front bar and 4 Hundings on the back.
