Key things here being;

Referencing part of a reproductive organ would fall under vulgar, typically.

Because.

Does it suck to lose a name? Yes. But it 100% falls under their terms. You spending money has nothing to do with it.

This game is riddled with sexual innuendo in the lorebooks/quests, and is filled with graphic violence. I'm more bothered with the community defending this decision than ZOS actually making the decision. Some game communities are toxic, this one is just lame and vanilla.

It doesn't matter. M rating covers all of that regardless of why they technically rated it M. You're saying you're ok that it's rated M for sexual references and killing people but you draw the line at vulgarity?
