Animation Cancel is as simple as hitting light attack and then using an ability before the animation of the light attack finishes.
Perfecting this allows for you to squeeze more DPS out of your character.

Block cancelling is another form of AC, allowing you to get your block up quicker. There are other forms as well, like cancelling via barswap, etc.

Practice on a dummy in town somewhere and get ur rotation down.
Anamation canceling LITERALLY separates the skilled from the unskilled. Reason being people can cast all of their abilites without you even seeing them casting them.

This being said it's a skill needed to learn in order to be good at pvp atleast pve it really doesn't matter unless you want to do more damage tbh I pvp all day no pve really so I had to learn it.

Sadly it should of been taken from the game because they never fix anything they just leave things broken it seems dungeon ques have been broken sense release so is bgs and with proc sets dominating rn ill be surprised if they fix anything honestly

The benefits are you can squeeze out a few extra 1-2k dps. Also being able to block and cast at the same time is nice. I also find it makes the combat a bit more fun and enjoyable, as well.
