This is the answer. Tough most damage is avoidable and the rest can be blocked. If one tries to stand toe to toe with something that takes them more than a few second to kill that extra mitigation become irrelevant.
Being able to kill faster is always better and get vigor.
Stamblades do well in medium armor. Though playing them tanky with heavy is also doable for solo questing... one just has to do a lot more heavy attacks, 's all. I still did my "heavy armor" stamblade alt with a mix of heavy and medium...
What armor? That's up to you, many do well. Whatever you feel is most fun for your playstyle...
If you're into PvE content (as it appears you are), I highly advise you look into the: Automation, Spriggan, Night Mother's Gaze, and Hunding's Rage sets. The later 2 being craftable. If you can manage to farm trials, then I recommend you seek the Vicious Ophidian and Twice-Fanged Snake sets in particular. As they both provide incredible benefits to stamina builds of any class. As for an undaunted/monster set, I'd recommend either Kra'gh or Velidreth. The former being good for single-target damage, and the later being good for hitting multiple targets.
