Ok so I've trying to find a good leveling build on YouTube and tamriel foundry but I can't find one, I would appreciate it if someone can give me any tips of what kind of enchantments or armor I should use and what skills I should have slotted?
My advice, unpopular as it will likely be, is to play it the way you feel is comfortable and successful. Depending in particular on your preferred playstyle - solo or group, PvE or PvP, casual or competitive - you may or may not need to change it come Morrowind. Either way, play the game the way you want to, not because it's the way some other guy plays it. In particular, don't over-estimate or even pre-judge at all the changes that are coming - not least because we don't know yet what exactly they will be.
Usually when I level a character I just use the armor I pick up. I do make sure to have at least one of each type so heavy medium and light all level up. That way later I have all the options as far as what armor to wear. I did craft armor with training on it when I wanted to rush a character some.
You want to level as many skills as you can. Make sure you have at least one skill from each skill line on your bar and that it needs to be leveled. Personally I would start withe duel wield then at level 15 go back and forth advancing duel wield and bow. The bow gives you an option for ranged and can compliment whatever you end up with on the front bar. Somewhere along the way I also level up either two hand or sword and shield depending on if I may want to tank or not. I just try to give myself as many options as possible when I finally hit 160.
For enchants when I used them I went for a lot of health as I was putting my attribute points into stam or magicka depending on character.
I think the goal while leveling is to work towards giving yourself lots of options later and take the time to play around with rotations.
