I'm kind of shocked they've not made a statement yet, considering I am hearing about a lot of people leaving/unsubbing.

I'm more "kind of shocked" that people are talking about leaving/unsubbing on the strength of an updated privacy notice that is probably no different to anyone else's and which ZOS haven't yet issued any clarification over. People are already reading into it that the game is going to be riddled with advertising and going F2P which seems to be rather a giant leap of the imagination.
I do think that ZOS should make an early statement clarifying the situation, but until they do it would seem perfectly reasonable not to jump to conclusions or overreact precipitately.

If you are opting out with your email tied to the game they should already have your account info based on your email, though right?
Simply use email that's not your main email and details that are fake (obviously credit card details can't be fake. But those can't be shared anyway as that would be a federal crime on a massive scale in almost any country in the world)
There you go, problem solved. Let them spam your disposable email full of junk all they want, addressed to Mr. ILikeFishDicks. It's what I do and it works.
