I admit that I'm guilty for causing massive slaughter at this caravan... but shouldn't the NPC's also have guard protection from players like me as well?

✭✭✭✭✭Isn't that caravan a place where the NPC residents -specifically- stated something like "no guards allowed"? See what it gets them!
On a more serious note... I would respect the "lawless" place where guards are concerned... but let them have a good smattering of NPC archers around that pelt any wrongdoer with arrows until they are dead or something. Throw spikeballs at 'em. Cast an stun spell, and lock them in a slave cage or whatever...0 -

✭✭✭✭✭To add a bit of RP to this, if you find the residents of your camp being wiped out every couple days, you might at some point want to consider adding and invincible law enforcer or two. Those corpses will start to smell up the place pretty fast. If you live in a world where a single being can walk in and just decimate your entire village with magic and steel, it's a place where you take precautions we might not need to in the real world.
Of course the counter argument to this is that they probably just have a huge pile of soul gems lying around to rez these people up and they might enjoy being killed off only to revive again the next day. Some people could be into that sort of thing.1 -

Sings-Many-Songs, Argonian fisher: Sure, I'll do the thing... Eventually. Maybe.
Aerindel, Altmer stormcaller: After extensive research, I've come to the conclusion that doing the thing would be a waste of resources.
Liliel, Dunmer pyromancer: Aerindel said I shouldn't do the thing. Something about "resources".
Gyda Snowcaller, Nord cryomancer: I will find a way to do it that won't waste resources and make Aerindel proud of me.
Beatrice Leoriane, Breton vampire: I persuaded someone else into doing the thing. You are welcome, dear.
Sahima, Redguard performer: Doing the thing sounds awfully unpleasant and really not my problem.

Onigar✭✭✭Scattered throughout all the maps are locations where some concentrated element is available be it zombies in Alik'r, Spiders in Bankorai or NPC's in Hardrans Caravan.
There is no need to adjust anything in the game it is already balanced very well in this respect.1
