Yeah, it took me awhile to figure this out too. Only your current weapon counts towards the set. In your case, since you're using a 2h weapon on one bar, you're only going to have 11 slots to work with on that bar which means one of your 5-piece bonuses won't work when you have the 2h weapon up.

If you want to have the two 5-piece bonuses no matter what weapon you have up at a given time, you'll have to sacrifice the 2-piece monster helm set bonus. Either that, or you'll have to dual-wield or use a 1h weapon and shield on the other bar instead of that 2h weapon. If you absolutely will not give up the two-piece bonus of a monster helm set, then you will have to decide which 5-piece bonus you want to be active for each of your weapons.

You can do some clever stuff like this though. For example, if you're doing 2h and bow, you can select one set that has bonus that works with the bow, and a second set that works with a melee weapon. Then have the weapon count as the 5th piece for each set and when you switch weapons you'll be switching which 5-piece bonus is active.

Specifically, you could wear your monster helm and shoulders, wear Viper's Sting neck, two tings, and a Viper's Sting belt, then Kyne's Kiss chest, legs, hands, and feet. Then use a Kyne's Kiss bow and a Viper 2h weapon. When you have the bow up that will complete your Kyne's Kiss set, and likewise for the Viper set when you have the 2h weapon up.

I hope this helps you because it took me a lot of research and experimentation to come to this realization!
