I am new to eso and have been doing research and have come to the conclusion that I will be a red guard using dual wield and a bow however I'm unsure what class I should be if I'm doing mostly solo content PVE with very little PVP.

Techkey1✭✭DK (Dragon Knight), very good for both. You can dungeon delve alone if you want (well any class could technically), but DKs are very good for it, and the sustainability is excellent in both (PVE and PVP) as well. I don't really PVP I'm more of a PVE'er.
