Imperial is good if you want to be a little tankier. you get 10% stamina and 12% health. the last passive is too useless to mention.

Redguard, or Orc work pretty well for more damage focused. Imperial or Nord for tankier builds (I actually settled on Imperial personally).

I'm not to sure if Bosmer and Khajiit would work too well for stam DK, not for PVP anyways.

For non-vet race doesn't matter as much because by the time you unlock all the passives, you're getting kicked out.

I feel like khajiit works really well for stam dk. Since all DK skills that can be morphed into stamina are DoTs I feel like Carnige(khajiit's increased weapon crit chance) works really well between me casting my DoTs.

Redguards are the high elfs of stamina.
Plus, they also have a bonus in sword n shield training

In the end, it depends on playstyle. Redguard are good if you want to play it DPS style, orc and nord make for decent tanks, imperials and khajiit can be useful either way, even argonians can pull it off with still being quite effective...

I'd still say, fu... uhm... forget super-effectiveness, play what seems most fun for YOU!

I think Redgaurd is the best all around stamina race if looking at all content. They will have the highest base damage and second best sustain behind woodelf. This makes them excellent for PVP. You cannot go wrong with redguard.

Orc is also an interesting choice with their damage and mobility, but only in PVP. They are particularly appealing on a stam sorc because they are fast AF.

Honorable mentions go to woodelf (best sustain, but terrible in PVE), Imperial (same damage as redguard and a little more health, also make great tanks), Khajiit (great in PVE, but really only good in PVP for a ganker), Dunmer (not a typical stam race, but good if you want to go back and forth with magic).

Edit: two other things to point out after reading more of the comments. First, nord is just terrible, even for a tank. Their damage reduction passive gets buried in the mitigation formula and amounts to practically nothing. Second, Khajiit is king in a perfect raid for PVE DPS (not that thats what you are after), but crit is getting nerfed. I am not convinced they will still be on top.
