Should I choose a nord or redguard for my stamina Templar?

I do find the number of naked Nords in the game to be amusing.
We even had to fetch some "Naked Nord's Pants" once, for a quest. And the best part is, I didn't have the trait researched, so I was able to say on guild chat "Last research done, time to research these [Naked Nord's Pants]".Just so that everyone knows, my Altmer still can't have black hair. About a dozen of Altmer NPCs in the game have black hair. Just saying.

Zadarri, Khajiit Fist of Thalmor: The thing was done, as commanded.
Durza gra-Maghul, Orc blacksmith: The thing was done perfectly, in the most efficient way.
Tegwen, Bosmer troublemaker: You can't prove I didn't do the thing.
Sings-Many-Songs, Argonian fisher: Sure, I'll do the thing... Eventually. Maybe.
Aerindel, Altmer stormcaller: After extensive research, I've come to the conclusion that doing the thing would be a waste of resources.
Liliel, Dunmer pyromancer: Aerindel said I shouldn't do the thing. Something about "resources".
Gyda Snowcaller, Nord cryomancer: I will find a way to do it that won't waste resources and make Aerindel proud of me.
Beatrice Leoriane, Breton vampire: I persuaded someone else into doing the thing. You are welcome, dear.
Sahima, Redguard performer: Doing the thing sounds awfully unpleasant and really not my problem.
Ellaria Valerius, Imperial priestess: I'll pray to the Eight for the thing to be done, if it is Their will.0 -

✭RedguardRedguard for sure, the best dps output from stam Templar is biting jabs, and it's mele. Doing mele damages will generate stamina as one of redguard passive. So you aren't going to ran out of stamina as often.
However, a word of warning, Templar stamina dps really suck bad, even with best in gear, best sets and rotations, you still lacks dps compared to sorcerer or dragon knight classes.
Templar are real healer, crap dps.
