Which siege to use on doors to get them open really quickly

First you need to hit the door with an oil catapult or two in order to get nice coverage.
Second with a fire ballista to light the oil on fire. Doors are pretty thick, so it won't likely burn through, but that's not the goal anyways.
Third with a meat bag. That will roast some of the meat, and the smell will tempt the guards to open the door as they're usually hungry (it's pretty far from the market to most keeps).
You might have to kill the guards, but if you time it right and also hit the door with a lightning ballista, and the guards are Khajit (or a really hairy other race), then that will cause a build up of static electricity in their fur that will make sparks and they will run away leaving the door open.
So now you know the secret.. All those people getting yelled at to not hit the wood door with their meat bags and the like are doing it right.
