Fortunately, I am not actually one of those people and always take all of a node when harvesting one. However, this idea pooped into my head while node farming in Wrothgar.

There are no "physics" on Nirn, the butterfly, the air, the ground are all spirits more or less solidified within a singular form. These spirits are "forces" that can be conscious (like our hero) or pretty inert like a rock. However all can be influenced and changed by Will.
The butterfly flapping it's wings is merely something the spirit does, it flies simply because it's spirit has the Will to do so. Mage books explain how Alteration magic convinces these spiritual forces to change based upon the Magician's Will.
So in Eso a rock could fly (such as a spirit made of stone lava can seem to float weightlessly in the air)1 -
