Holy trinity and which classes to use?

So i have a fully leveled templar that i've been using as a Tank/DPS for PvE using one-hand and shield and a 2h sword. But i'm probably going to re-spec him as a healer. If i do that, is it viable to use a destro staff as a secondary weapon and be able to be a healer/DPS for dungeons? Or am i better off putting a resto staff in both slots?

Also, what is the best way to do DPS? Staff or melee? if melee, which kind? I currently have nightblade with dual wield, working on possibly doing a bow but i'm not sure what the best DPS build is.

P.S. i really hate the class system. Previous ES games were so flexible, and i didnt need to worry about choosing the wrong class or weapon type cuz i could easily switch. I could reach end game as a mage and decide i wanna become a heavy armor warrior. In this game i'm constantly bouncing back and forth and second-guessing myself...

    you have to choose between magicka and stamina, and put your 64 points into that.

    for dps, the standard weapons are dualwield + bow. bow is for using the two damage over time skills in the bow line, dualwield is for real damage coz it has the highest weapon power out of all setup, and allow you to use one more equipment slot for set bonus.

    for healer, resto staff and destro staff. destro staff is not just for dps, as healer you use it for debuffing enemy spell resistance.

    for tank, one hand and shield plus twohanded is alright. twohanded has a nice HoT self heal buff.

    As far as the healing goes, it depends on what you are doing and the group you are in. On my magicka templar, I generally run destruction/restoration. I use this in dungeons (as healer) and open world content so I have a way to heal people for WB and dolmen fights. If I am doing a dungeon filling the damage role, then I run 2 destruction staves. If doing trials as a healer, I may run 2 resto staves depending on what other classes are healing and what skills they are running.

    Basically, you probably won't run the same combination of weapons all the time. Plan to be versatile.

    Thanks so much for the detailed breakdown. I'll probably have to pay for a race change for my healer since he's imperial, so i can get some magicka-based passives. What would be the best races for each role? I currently have:

    Imperial templar (going to change it though. Was my first character 2 years ago so i just chose what looked/sounded coolest since i've always played Imperial in ES games)

    Khajiit nightblade (not just for DPS but also stealth for Theieve's guild and Dark Brotherhood)

    Nord Dragonknight ( going to be my tank, for his health regen and damage mitigation passives)

    Breton sorcerer. (gonna be my last character. probably just gonna spec her as a ranged dps since my first 3 characters will cover the holy trinity.)
