The only events we've had so far have been within the last year:

1. Cake Week: I don't think that's what it was officially called, but that's what everyone seems to call it. It was an anniversary event (I can't remember if it was for the anniversary of ESO launch, or if it was for the anniversary of when ESO became ESO: Tamriel Unlimited) where there was a little mini quest to bake a jubilee cake, which then gave you the cake memento. For the duration of the event (which actually went longer than a week because of some bug or something, whose nature now escapes me) you could activate the memento whenever you wanted, and you or anyone you were grouped with could eat the cake and get 2 hours of double XP (so it was a lot like the Witches Festival in that respect, except you didn't turn into a skeleton or anything).
2. Imperial City Anniversary Event: double drop rates in Imperial City (so you needed access to the DLC) for Telvar stones and some other items that only drop in IC (I don't remember exactly what, but I think the skin that drops from the Molag Bal simulacrum was one of the other ones). This one also went longer than it was intended to, but I think they just forgot to turn it off when it was supposed to end, and got to it during the next maintenance.
3. Witches Festival: you know about this one, but for the sake of making this post complete, it's a new annual event with a mini quest to make a witches brew, which then gives you the crow caller memento. For the duration of the event (which again lasted longer than it was supposed to on PC, as there was a bug with one of the achievements on PC only, so extra time was added to ensure PC players could get the achievement) you could use the memento to turn into a skeleton for 2 hours, gaining double XP and getting plunder skulls as drops from bosses killed. The plunder skulls could contain recipes, motifs, and cosmetics unique to the event.
4. Orsinium Anniversary Event: double drop rates in Wrothgar (so you needed access to the DLC) for resource nodes, Maelstrom Arena rewards, and daily quest rewards. Did this one end on time or was it extended too? I had a medical issue pop up midway through this event and I haven't been able to play since, so I have no idea if this is the first limited time in-game event that actually ended on time lol.

I haven't included the New Life Festival in this list, because we haven't had it happen yet, although it was on the PTS for testing a couple of months back and it seemed pretty interesting with a whole bunch of different mini quests to do for various rewards. I didn't play around with it much on PTS though, so I can't give a lot of details on it, aside from the fact that one of the mini quests involved jumping in icy cold waters in a specific spot as part of traditional festival merriment. I think there was also alcohol involved in that quest, but now I don't remember if it was me or my character who was drinking the alcohol
