I can't find any sets for medium that work like night mothers for stamina builds . My friend asked if anyone knows of something for him to move faster in medium as he is a stam user .

Night's Silence. Crafted, so any weight. It's a Stamina version of Shadowdancer.1 -

Yep. Full movement speed in stealth.
The other, less appealing, option is stage 4 vampirism with Nightstalker, or Night Stalker's Footsteps, or whatever that passive is actually named. But, if you go that route, it's gear agnostic.
Also, I'm not sure, but I think Vampiric stealth speed stacking may be a thing again.1 -
