Too be honest, you could go with bloodthirst but you lose a lot of DPS off of that choice and I really cant figure any reason why anyone would choose it unless you're playing very very safe.
Rapidstrikes (the other which you probably meant) is way better overall imo.

I have Bloodthirst on my StamNB cause it gives me a steady amount of healing while I'm attacking. It's easier than having to switch over to my buff bar to cast Vigor over and over. Now am I losing out on extra damage output? Probably, I don't know for sure.
Correct, Bloodthirst only heals on the last hit (which hits for 300% the base rate). However it's not a super long channel, so you get to the last hit fairly quickly... so if your not worried about dps and want a continuous stream of self-healing, it works well enough.
If your looking to maximize your dps, there are better options available (such as Surprise Attack on a stam NB). However if your looking for self-healing while questing and such, and don't mind slightly lower dps, then Bloodthirst is fine.
If you absolutely want to use the DW Flurry skill and want it for dps and not self-healing, then take the Rapid Strikes morph rather than the base Flurry skill, as that will increase damage done with each hit - ie higher dps.
You have to consider the actual amount of DPS Flurry increases over Bloodthirst which is not that much. Only the 2nd/3rd/4th hits are increased and not the last one. It works out to about 2% more DPS. So if you're doing 15k DPS with just Bloodthirst then Flurry would give you an amazing 300 DPS more.
For an end game trial build where you never need self-healing and want every last 0.1% of DPS, choose Flurry. For everyone else it's Bloodthirst.

On my Stamm NB I use bloodthurst. I like the extra healing also. For me if I wanted more DPS I'd use surprise attack instead then I can switch on fly... obviously you can't have that on DK though. But, you'll do more DPS if you aren't dead, and it's saved me a heap of times by giving back health.
You can dps longer using blood thirst in my experience. Longer runs without needing to stop dps all together and heal is more dps in the scheme of things. It's the reason senche on paper is great, but not good in pve bc to Kerri or active you have to roll dodge.
If you're not having issues keeping hp up, go with rapid strikes.
