AFAIK there is no benefit but that is based on very limited sample sets where i accidentally clicked wrong and spent more mats on higher level writ items.
However, you cannot make level 50 iron, it stops at 14ish.

Always make the lowest level item for the material of the writ you are doing.
Never improve the item.
Never put a trait on the item.
1 will save you mats, 2 and 3 will stop the writ process as the game won't accept traited or improved items. The only green thing you should ever turn in is Food or Drink (or Potions I think those are Green also when you make them)

The gold you get for doing writs is based on your characters level only. So, whether you've put no skill points into the craft and are making level 1 items or you've put max skill points in and are making cp150 level items you'll get the same amount of gold.
