Most forum management tools allow mods/admins to edit the PHP code of the post or entire page (obviously only if they have permissions to do so). Which would also include editing topics and text without actually making or editing the text the normal way on the forum itself but via the moderation page/php editor where you practically can change anything you want and however you want.
Not saying they do such things, but it's not impossible and if said mod has the rights, he can indeed edit posts without having the "edited" tag appear on the bottom. That is applied automatically only if you post or edit via normal means, not via php/page editor.
Question is - whether it's true or not, however I won't side with ZoS - they have a history of lying on numerous accounts.
