Once I logged into ESO completely via the launcher, it actually deleted the documents folder for liveeu all by itself.

Oh yeah, okay. So I didn't delete anything off of my computer and was able to log in successfully on both the NA and EU servers. I only had the EU version installed on my computer prior to the patch. Now I have the following folders within my C:\Program Files (x86)\Zenimax Online directory:
-> Launcher
-> The Elder Scrolls Online
-> uninstall
So that seems to indicate to me that you only need one install to play on either server. Hope that helps.
