This stage is 90% RNG, 5% timing, 4% skill, and 1% mechanics understanding. A horrible ratio for the player to deal with, in my opinion.
However, to combat this — I highly recommend going for ranged damage for the most part. You'll have a much easier and smoother time, than say close-quarters combat. But, I suppose whatever works for you is what works. Best of wishes regardless.

In all seriousness I don't think it's much harder than any other stage. It just requires more situational awareness than other stages. Stage 9 is imo much harder than 7

But really those mushrooms are the entire fight, keeping an eye on them is priority #1. If ever possible try to fight at a place when they aren't grouped up, archers range isn't infinite and you can usually get them to move if you run away a bit. If you absolutely have to fight an archer next to a mushroom stay at max melee range and keep moving, even if it's just quickly back and forth. It's a lot easier to get out of the aoe if you're already in motion i find.
If an archer is firing his 1 hitter and you can't interupt him, just dodge it.

I'm also stam sorc but stage 5 and 8 are where low cp and gear make the most diffirance imo, dealing with the ranged adds is vital on stage 5 and adds/mechanics on stage 8 can be completely avoided if your damage is good enough. On my worst run of stage 8 boss i had to destroy the stones 4 times before i actually killed her.
But the stages that took me the longest to get passed are the easiest for me now(7 and 9). I spent so long failing, by the time i actually cleared them I'd made every mistake in the book and then some .
