Does anyone know if they're going to add multiple servers once "One Tamriel" comes out.. Don't you think its going to be hard to grind or do whatever with loads of players on the same world?

They are not going to add Multiple servers from what I know of.

However, despite there being 3 times more players in the world, there will be WAAAAAY more grind spots as all zones will be equivalent to Max Level Zones.

They need to sticky a thread explaining this as I have seen countless of threads similar to this.

Pve zones will continue to be instanced. So once one area becomes over populated the server will create another instance of that zone.

There will be more than one instance of each zone. In fact, there is right now from what I understand.

So if I am meeting someone in Mournhold there is a possibility we can be standing in the same spot and not see each other (unless we are grouped)?
