Prove that such a mount is lore friendly. If it is not lore friendly, then it has no place in ESO.

Lore does have internal logic (ie there is a reason there is no guns, computes, etc in ESO) and does have history to follow (what BGS said has happened in TES I to V) ESO is 1000 years before TES V and about 800 years before TES III and IV.
In many player's eyes, BGS lore has more weight than ZOS / ESO lore masters. Therefore, ZOS must follow the lore that is made from BGS.
(BGS = Bethesda Game Studio, a sister company to ZOS. Both are owned by Zenimax Media Inc. ID Games, maker of DOOM games is also own by ZMI. There is also Bethesda Software Company (owned by ZMI as well) that does hands the shipment of games to the stores and online stores.)

I just imaged that also, and it was GLORIOUS. Nothing would strike more fear in the heart of an opposing faction as a charging wave of zerglings riding majestic and proud gorillas.

People (both IRL and in the Elder Scrolls universe) are always looking for better ways to kill each other, and they tend to catch on rather quickly. Chances are that if firearms don't exist, it's because explosives haven't been created yet. The two tend to go hand-in-hand.
Firearms are actually a rather old invention (the Spaniards had them when they came to the Americas 500 years ago, and even then, they were in use before that), so I suspect that we may see firearms very soon in future Elder Scrolls games. It's only a matter of time before an alchemist discovers how to create gunpowder...
