im a stam sorc...does being a werewolf serve any benefit? what about if i DONT have the werewolf transformation slotted?

No benefit. If you don't want to use the ult, just become a vampire. You get 12% mag and stam recovery for being in stage 2.

Confirm. Werewolves haven't any benefits while not in the form or ult.ability slotted

You need to slot the ultimate to get the passive, not sure if it's worth it for a stamina sorc though.
