How to achieve high weapon damage and high stamina regen, what am i missing?

No matter what gears i equipped and trinkets it seems that i can't get those 2 on par, one must always sacrifice for lower values yet somehow when i see streamers they get insane stats both cp and non-cp. I'm currently running
Weapon equipped: Sword & Board
Set used:
Item set 1(Armor passives included for both medium & heavy)
-Hunding's Rage + Ravaging +Nerien'eth's- (5 Heavy, 2 Medium)
item set 2(Armor passives included for both medium & heavy)
-Hunding's Rage + Viper + 1 pc. Nerien'eth's- (5 Medium, 2 Heavy)
Using 2H sword still wasn't able to reach 1k+ the highest i get is 999(non cp) using HR + Viper and Food(Max health 5395, Max stamina 4936)

Unbuffed = 2384
Buffed = 3864 (Major Brutality + Ravaging Proc + Heavy Armor proc)
Class Skill: Biting Jabs
Unbuffed Damage = 739
Buffed Damage = 933
item set 2(Armor passives included for both medium & heavy)
-Hunding's Rage + Viper + 1 pc. Nerien'eth's- (5 Medium, 2 Heavy)

Unbuffed = 2485
Buffed = 2890 (Major Brutality)
Class Skill: Biting Jabs
Unbuffed Damage = 817
Buffed Damage = 880

✭✭✭✭✭Because your sets are all ability and no stats. All you have is hundlings 5th bonus, everything else is crit and N'erienth and Viper.
You gotta change that stuff to get higher numbers in regen and dmg.
Plus gold weapons, weapon enchant, regen mundus or shadow thief
Edit: I typically go for one (no more than 2 imo) effects. Example: Kena and Eternal hunt with agility jewelry,
