So I want to get into the game, however the whole issue with current DLC, Gold Edition and the new DLC coming out is really confusing. What would be the best option for me to simply unlock all the content?

Gold Edition will give you Imperial City, Orisinium, Thieves Guild and Dark Brother hood DLC at purchase so if you want those four but don't want to sub, that would be a good option since you'll get the base game too. You won't get the new DLC with that though

Ok, Gold Edition is coming out in September though right? I'm going to college in September and probably won't be playing then. Is subscription still ideal?

Yeah. With a subscription, if you know you're not going to be playing in a given month, you can cancel, and then start it up again when you're able to be active. If you're playing in short bursts, then it's going to be far cheaper than buying the DLC. There are also other perks to being subscribed, like a crafting bag that will squirrel away all your crafting materials, and keep them out of your normal inventory.
