You fillet the fish. I always thought it was acquired by the actual fishing. Just like Salmon Roe.The Green, Blue and Purple fish you get you can only sell, no filleting them.
White ones, I did not even know you could sell them, but I never tried. I guess there is nothing stopping you from selling them. Although I would imagine you would get more selling the un-filleted fish in the guild stores.
