I know this sounds stupid but I actually bought the ash lander pack instead of the nordic one, is there a way this can be reversed?

As far as I know, no, but CS might be able to pull some strings.

Maybe if you're reeeeeeally polite and ask reeeeeeeally nicely they can transfer the unlock (since it would be the same amount of crowns if I'm not mistaken, just transfer which pack your account owns), but... you'll probably get "sorry, can't do anything about it". Can't hurt to ask, though. (:

I don't think so, you can still open a support ticket as Stark has commented. It is possible they can swap it out for you if it was done recently. never know unless you try

Unfortunately, nothing in the Crown Store can be traded or gifted. It's a deliberate design decision to prevent people from turning crowns into gold.

I doubt that, there is no refund option when you buy something from the crown store.

I realized one day, that I do not use the first mount that I bought at the beginning (guar), I prefer the lioness that I bought as my second mount. Asked ZOS in a support ticket, if they can refund me the first mount, that I do not use it, reply was, sorry, no refund possible.

I would send in a ticket. Especially if you JUST did it. They might be more forgiving if it just happened.
