Maelstrom Weapon Traits

This is mainly about defending traits on maelstrom weapons. I have just gotten a gold maelstrom dagger with defending, I have also gotten a inferno in defending. Those 2 weapons are weapons I have been wanting for a long time and have never gotten besides in defending.
I just have to ask... why do any weapons other than 1hsword, shield, and 1hmace come in defending anyway. Who is going to make use of a defending staff? Can we get the defending traits removed from most maelstrom weapons?

Infused increases enchantment damage! (and shorter cooldown but this is irrelevant)
Is it the best possible trait now for The Maelstrom's Bow?
Considering that the main point of a Maelstrom Bow is typically to shoot Volley and switch back to 2H/DW for DPS, the trait never really matters much. I hear this is because the damage is boosted by the Maelstrom enchant, but bases each tick on your currently held weapon (meaning you just switch to a 2H/DW for better trait and damage).
If Infused, shouldn't the unique Volley-buff MA enchant deal more damage and not get affected by weapon swap?
So many questions..... hopefully someone with actual knowledge can answer them for me
