When you pay the stable master a daily fee to level up your mounts speed, stamina and carrying, you'll get an different accessory when each one hits level 20 if I remember correctly. Pretty sure lvl 20 speed gave my horse the helmet, lvl 20 stamina gave me different saddle & carry space added the bags on the back.0 -

Fruitmass✭✭✭✭I walk like some kind of peasantMost of the time I'm hoofing it across the map. Spend too much time gathering to bother with the mount. Only times I do use it is if I have to get somewhere in a hurry like one of the Wrothgar bosses or I'm in Cyrodiil (cause the map is way too big to move around on foot).

When you get to 20 in one of the stats, a visual upgrade is applied to your horse. Saddle Bags for 20 Bag spaces, a webbing under the saddle for 20 speed and some face armor for 20 in Stamina. You can toggle these off in game options if don't like the look of one of them or all of them.
@Nestor, thank you for the explanation. How do we upgrade in the stats? Is it the only way by purchasing the upgrades at the crown store?0 -

You're welcome, it was available all along in game.
Just remember, only one stat can be upgraded per day. Every stat (speed/stamina/inventory) has 60 slots to upgrade so a maxed out horse on all three stats will take 180 days.
