Good morning Tamriel!!!
TLDR: I am creating a few build idea's for those of us (filthy casuals lol) that do not have the time / desire to min max or care about competing at the highest levels of game play - i know i will not get vMSA axes or daggers with the right traits (or even complete it yet lol). Builds focused on having FUN in game...just thats it...FUN. Not efficiency or max damage etc. FUN.
I am working these days on a different way of playing The Elder Scrolls Online...going back to roots by truly playing "how I want" and not focusing on min / maxing. I just started my own family and realized that I cannot dedicate time to building a min maxed character out so I wanted to focus on taking my time and ENJOYING the game.
I have always enjoyed games like Diablo, Magic the Gathering and Baulders Gate....god i loved baulders gate 2 shadows of Amn....so epic that game and way to massive....nostalgia over now so i wanted instead of having the typical "DK, SORC, TEMPLAR, NIGHTBLADE" class that i would make up my own classes. Things that make both RPG's like Baulders Gate 2 and original TES games (Example was TES 3 Morrowind) was the ability to create a class name it yourself and then not be restricted by things (armor, damage numbers, mixing spells and weapons).
Some of the best fun i had in TES 3 was creating some stupidly OP 99999 damage spell cast it at someone watch them explode then run in with a big 2 hander (simply because i couldn't dual wield at that time) and then start spamming my right control trigger with bad slash and chop animations.
Why should it not be any different today?
I understand that deep down every gamer wants to have the best of the best and in NO WAY AM I SAYING THAT IS WRONG. It is totally cool to dedicate the time, find the BEST OF THE BEST builds and then use them to acquire the top line gear. that is just part of gaming.
What i have noticed though is that there is a population that just doesn't want that anymore...being 27 I was neither to young nor to old to remember games like Doom...Diablo 1...Baulders Gate 2. and to top it off i have had the privilege of spending my youth on GREAT games like Diablo 2 where talent customization was MASSIVE. Baulders Gate 2 where it was endless...KOTOR 1 / 2 (god that was fun). We played these games to create a character we wanted and wanted to enjoy.
Having the biggest numbers was cool...but not necessarily why we played.
Hard boss? okay no problem...barely made through it? Okay thank god we did it...was it optimal? Hell no! Did it make us sweat and pound / spam our buttons and controllers? YES! it was a rush and a feeling of victory afterwards.
Either way...Welcome to the below 3 starter classes i created...while some of them are not optimal they fit what was RIGHT FOR ME....taking a little bit of the meta while throwing a spin on it.
Race choice for me was Imperial as i love Imperial in general...IMPERIAL FOR LIFE.
Weapons...i love Dual Wielding swords...soooo much fun
Bow because it does give synergy and helps me out a bit.

Gear idea: 5 Piece Morong Tong (15% bonus to posion dmg) + 4 Hundings Rage + 3 agility jewelary
DW Bar: Fragmented Shield (obsidian shield morph) + Venoumus Claw + Noxious Breath + Blood Thirster + Igneious Weapons + Dawnbreaker
Bow Bar: Posion Injection + Caltrops + Proxy Det + Vigor + Flex Skill + Standard
Templar:
Theme: Angelic Swordsman / Silver Blade - Taking mercy upon the poor mortals of Tamriel...The Divines decided to imbue their chosen champion with the powers of the Angels. Granting him twin blades of Silver he is able to burn away the taint of Molag Bal from the Imperial City with Holy Light. The angels guide this swordsman.
Gear Idea: 5p Twice Born Star (Warrior + Tower mundus)+3 agility + 2 V Skoria
DW Bar: Reflective Light + Twin Slashes + Flurry + Radiant Oppression + Vigor + Dawnbreaker
Bow Bar: Poision Injection + Caltrops + Prayer of Retribution (magicka DoT) + Rearming Trap + Endless Hail + Nova / Meteor
Nightblade:
Theme: Blade Dancer - His family destroyed by ravaging Deadra...he barely just survived escaping into the wild barren deserts...only to be found by an ancient clan of warriors. Taught for years to become one of their deadliest students he now hunts down the Worm Cult and anchors using dark magic to enhance his own vision, speed and strength.....
Gear Idea: 5p TBS (Warrior + Tower) + 3 Agility + 2 Kena / Skoria
DW Bar: Ambush + Surprise Attack + Twin Slashes + Flurry + Twisting Path + Dawnbreaker
Bow Bar: Posion Injection + Caltrops + Endless Hail + Rearming Trap + Vigor + Veil of Blades

Hisa Ni Caemaire (altmer) was born into wealth, daughter of a prophetess, so she had several hundred years to get used to the idea that many "faces of the vestige" would be drawn into oblivion and have to fight their way back. Part of her fury at the daedric infestation of Tamriel is that they stole so much from her, from everyone. Her greatest strengths are her relationships; both family and other.
Gear: Necropotence 5 pc, Warlock jewelry, Seducer 2 gear + Seducer Flame Destro stave [single target bar] + Seducer Healing staff [group bar].
Single target bar: Crushing Shock, Crystal frags, Empowered Ward, Unstable Clanfear (healing morph [her name is Ta]), Twilight Matriarch (healing morph [her name is Roo]); Ultimate: Summon Charged Atronach [his name is Cumulonimbus]
Group Target bar: Mutagen, Lightning Flood, Restraining Prison, Unstable Clanfear (healing morph [her name is Ta]), Twilight Matriarch (healing morph [her name is Roo]); Ultimate: Summon Charged Atronach [his name is Cumulonimbus].

Mol gro Durga (orismer) has two memories which sustain him. The memory of Nibenay Valley, his home for decades before it was destroyed. He made it back to Tamriel, only to return to Oblivion bent on the rescue of his Second (he was using the Prophet as a way to rescue Alvard Stower just as the prophet was using him to rescue Lyris), but while back in Oblivion, he lost hope and was rescued himself by a vision from Atherius; Breton Templar, Fianna Kingsley. His first vision of her, was of her surrounded by the glow of Atherius, healing him. Because of this, and the fact that they adventure together - he has absolutely no self-healing. Many of the things on his bar add to damage, stamina and so on just by being slotted or activated.
Gear: Hundings Rage 5 p, Night Mother 2 pc + Night Mother 2-h sword, + Night Mother double swords + Darkstride jewelry

Filthy casual here and loving it!
I chose a Sorcerer as I really have no time for alts and it seemed the most flexible class if I got bored (caster/tank/dps).
At first I tried a Battlemage with Destructo staff but soon reverted to hitting things with sharp objects (its what im used to).
Ok so I am in VR16 full plate with 5pc Spectres eye / 2pc Hundings Rage with Stamina enchants.
2x swords and a Bow
Main bar (duel wield)
Blood Craze
Whirling Blades
Liquid Lightning
Battle Chicken (unstable for Heal)
Thundering Presence
Ultimate = Flawless Dawnbreaker
Second Bar (exploration/farming) - Bow
Focused Aim
Scorched Earth
Retreating Maneuver (get around quicker)

Ultimate = Flawless Dawnbreaker
Im not the fastest at killing but im hard as nails which helps for my solo play style.
Ive levelled 2 handed and sword & board but just love duel wield.

karmamule✭✭✭I avoid min/max-ing like the plague. It's fine for those who enjoy it, but for me that sort of theory-crafting is way too similar to my work and qualities like immersion, discovery, and a sense of playful fun are more what I'm looking for.
For example right now I'm having lots of fun with a magicka/stamina hybrid sorceror which is far from the "best" build in min/max terms, but I'm having a blast. It's great to soften them up with a few spells then use Critical Rush to zoom in and finish the job with a big swipe from my maul or greatsword. If they don't go down quickly then I rely on my heavy armor plus lightning form to keep me safe while I finish the job. If they're REALLY stubborn then my magicka will be regenerated enough after a few hits to switch back to some storm calling or dark magic to finish 'em off.
Good times.... I have a few other ideas bouncing around for a fallen templar who I'm going to take through Dark Brotherhood soon. 0 -

I do like the idea of hybrids in general; a lot of my weapon choices come straight out of how I see the character.
My goblin Broken Branch Toothmaul is a templar (was inspired/sorta rescued by a Templar) loooves the Skull-headed staff that you can find some places, which happens to be a Flame/destro staff. My main sorcerer is much like your summoner except I don't have ward yet and use daedric prey instead. What is necropotence and where do I get it? I use a combo of seducer and gift of magnus.Scura di Notte - Altmer Nightblade (gear)

✭✭✭✭Necropotence is a dropped set (seems to be random - not sure if there is anyplace it's more likely to drop) that shows up around 45th or so, and then again at vet9 or so (and I suppose this will all change tomorrow) that has something like:
2 items: max magicka
3 items: max magicka
4 items: max magicka
5 items: when pets are active, boost magicka 10%
And since damage scaled off of magicka for a magicka based sorc, you end up hitting like a truck. She's now Vet 3 and I'm still wearing purple level 50 necro gear 'cause I love it so much. She can wander around all alone in Craglorn (well, every once in a while the boss wasp will get her - I just never seem to see that one coming).

I miss here in game this flexibility of single player TES games, like ability to play as a Spellsword, Illusion magic Assasin and other unique combinations. I mean we have almost everything we had in main games, but in example bound spectral bow is just a skill that procs when hitting 4 light attacks while Relentless Focus is active. So yeah, being pyro assassin is hard.
But if anyone wants, I'm in the middle of creating a build that does not require any fancy Maelstrom Weapons and while being 90% crafted can be still useful. At least I think it is :P
