They're called races, but they're actually species or subspecies. The Dwemer are a presumed-extinct subspecies of Mer, which include the living subspecies Orsimer, Altmer, Dunmer, Bosmer, etc.
Khajiit and Argonian are individual species.
Nord, Redguard, Imperial, and Breton are subspecies of Men with some common ancestry.

Race, meanwhile, is an artificial social construct used to categorize, isolate, and control.

Perhaps that's why "races" is used in quotation marks in Notes on Racial Phylogeny and why it's called a "imprecise but useful term."

To get even more specific, the species is Ehlnofey, the subspecies are Men (Wandering Ehlnofey) and Mer (Old Ehlnofey), and the subsubspecies are the eight excluding Argonians and Khajiit. That would explain how the eight subsubspecies can mate with each other - Ehlnofey ancestry.

But race? Doesn't actually exist.

Probably Altmer, I hate to say. Would love to say Khajiit, but I don't think I'm that awesome. Argonian would be totally awesome too, but I'm just not that into swamps. Spent enough time in the Southeast US to care to stay there.

Edited to add that the aforementioned traits could also be applied to Dunmer, but they are generally much more religion-oriented and spirit-based for my personality type. Again, it's a shame. I started on Morrowind, and absolutely adore Dunmer.
