It sort of depends on whether you're a fan of solo play or group play. I find night blades fun for solo play mainly for the ability to go in and out of sneak whenever you please.
I'm currently running a stamblade in non vet
Race : khajit but redguard/bosmer would work too
All attributes into stamina but try and keep health around 20k with battle levelling
Armour 7 medium - hundings rage 5 price and 3 piece nights silence but night mothers gaze would work too
Running bow/2h, bow for utility
Jewellery is pretty hard to find at low levels in sets as you need it to be around the same level as you
Using health and stam food

Bow bar
1) poison arrow/silver shards
2) camp hunter/grim focus
3) vigor
4) dark cloak
5) piercing mark/blur
U) soul tether

2h
1) ambush
2) rally
3) surprise attack
4) mass hysteria
5) executioner
U) soul harvest

Personally I upgrade gear to green level (because I'm too poor to go to blue) every 4 levels because stats tend to drop quite quickly once you out level them.
This build helps me weave in and out of battles picking off players and the dodge roll sprint bonus on bow is helpful to get out of tricky situations.

I also have a magplar on non vet but that is much harder to play with.

Race : Breton/high elf
All attributes into magicka but again you want the 20k health
6l and 1 heavy (chest piece) going dual wield and s+b on the back bar
5 piece Seducer with 4 piece Magnus (haven't got kagrenacs researched yet)
I find this gives me great resource control and with battle levelling in green gear gets me to a decent amount of spell damage and Max magicka
Again jewellery I'm running syrabanes rings so I can have spell power enchants on jewellery.
Using health and magicka food
Also vamp for the regen and mobility

Dual wield
1) toppling charge
2) radiant destruction
3) structured entropy
4) dark flare
5) puncturing sweeps
U) crescent sweep (haven't morphed it yet)/rite of passage

S+b
1) eclipse/mist form/harness magicka
2) spear shards
3) honour the dead
4) repentance
5) purifying ritual
U) same as above

Haven't unlocked bat swarm yet otherwise that would be my go to ultimate
