When encountering nightblades, i seem to have this strange red beam on top of me, and then i get oneshotted. tried to dodge roll it, but couldn't, did i miss the timing, or something else?

Also, is there some pvp guides that wuold be good to read?

The red beam is called Piercing Mark if you try to hide or run that beam will show the NB where you are and make it easier to kill you by lowering your spell and physical resistance. Upside though it also makes it so your attacks ignore a good amount of enemies resistance as well.

You can purge the ability, or run back to safety/allies until it wears off, make sure you keep an ear out for the snipe sounds and roll dodge as soon as you hear it.

I came across a good PVP guide on the forums, but lost the link. Join a good PVP guild and they will help you learn.

Some quick and random advice I can think of is:

Don't over extend yourself when engaging the enemy, by that I mean do not stray too far from allies, or a place of safety while fighting.

If you are almost definitely going to die, no point running, try do as much damage or heals as you can before you actually die.

Use stone trebs against keep walls, and fire ballista/meatbag against enemies. Fire trebs are good as anti-siege to attack people that may be sieging you from a wall or roof. Siege is useful.

If you have good stamina or regen, roll dodge is your friend, if not, then make sure you have at least one defensive ability on your bars.

Don't feed the enemy AP, if you keep dying over and over and over in the same area and the enemy is not moving on from there, chances are you are being farmed, go to a different area and try find something constructive to do.

Try to always run with a group when you start out, use your allies as meat-shields until you get your bearings.

the red beam of death is known as mark target, the 4th skill in the assassination skilline. Most People use the piercing mark morph in PvP, which lets the NB see stealthed targets.

That's not true and has not been true for a very long time. There is no downside for a NB to use mark target aside from the opportunity cost of slotting it.
