I mean, why the hell not?
He practically does everything else, and Lady Laurent doesn't seem to have a horse or anything, so he presumably carries her tents around everywhere, which could manifest as an extended carrying capacity.
It'd be a laugh, watching players piggy-backing on their own personal Stibbons.

    Make him one of those new-fangled assistants who adds to your bag capacity and I'd go for it.
    In fact I don't think I'd ever use a pet again.

    By the way Stibbons looks exactly like Haskell, Sheogorath's manservant.
