I always enjoy it when some random chatter line gets inserted into a character's expository dialogue during a quest.

My favorite was this one Wyress in Bangkorai. Her dialogue went something like this:

"We're hippies who don't pay attention to the trivial affairs of city-dwellers because all we care about is nature and stuff. OH WOW YOU HELPED CHOOSE KING DORELL? WHAT A GREAT CHOICE!! Blah blah city slickers suck blah blah nature."

I really enjoy the multitude of NPCs that until you finish a follow-along quest that begin to yell and berate you for "going the wrong way".
