There's nothing stopping you from going back and doing everything now. Just pick an area (even if it's a small one) and gradually make your way around in those moments between whatever you do now. You don't have to do them all at once, just a bit a day will eventually get it done.
Saying that, I regret not spending longer trying to get into groups for doing the group dungeons. I tried a couple of times but just gave up on them thinking that one day I would find a group of people to do them with. I'm now vet2 and still have never done any of the group dungeons as I gave up on them.

People that think you CANT are deluded. Delusions of grandeur that their carefully selected race makes a difference. I feel sorry for these people, having to resist the urge to actually play what they WANT to play. Life is too short to waste on a game where you refuse yourself fun in the name of a slight statistic "increase".
