I havent found any skills in the sorc skill lines that would be effective for stamina tank builds. Sorcs can be decent tanks but you'll need a magicka based build to increase the value of your shields. Without shields there's not much that will keep you alive in pvp from the sorc skill lines.

Use Bound Armaments (or maybe Clannfear), Lightning Form morph of choice, a two handed weapon, vigour/forwardmomentum/rally/surge (or all) and streak. 2Hander synergy with critical charge (stampede) and surge. Then defensive stance on 1h + s. Maybe daedric mines or encase or lightning splash depending on pref / use.

But unless your heals will still be a bit low and you have no good damage mitigation... could use a circle of ptlrotection but that hits mobility...
