if I want to change one of my three Crafting certifications to a different profession is there a way to reset or are my original choices permanent?

You can do all six of them, just go back to the crafting teacher.

Well I find those black waypoints from the crafting boards annoying and wish to undo my certification.

And I want fishy sticks not roasted pork. Seriously. Plus yeah the black arrows always get me excited thinking I found a new real quest.

Simple, take the Writ and leave it in your list, then you never see the quest arrow again.

Enjoy the game, life is what you really want to be worried about.

To be fair you get a better reward from the writs than a real quest.

No. Once you have done them, you will be eternally bothered by the quest marker popping up in every major town. I wish I would not have done that on my fighting-only twink with zero points invested and zero interest in any of the professions (except for medicinal use, of course).
