I only have one veteran character (V8) and she's had 4 crafting professions throughout her career (Blacksmith, Enchanting, Alchemy, Provisioning). I just added Woodworking since I wanted to start using a bow (before then, she was strictly dual-wield).

You do have to make some choices in skills, but remember, you don't have to have every class skill or every weapon skill. I would definitely have all (or most all) of the passives, though.

Same goes for the skills in the crafting professions. You don't have to have all of them. For example, one point in Keen Eye is enough, and don't bother with Snakeblood in Alchemy.

My character doesn't have PVP or Undaunted skills either, but I was able to add a second weapon line. I've survived just fine, and have done a number of WB (vet included) solo, plus, I soloed most of the vet public dungeons, including group challenges, since no one else was around.

I just made sure to get all the skyshards in each zone, including public dungeons, as well as completing the group challenges. I did a couple of group dungeons prior to the level scaling, but I don't have any Cyrodiil or Craglorn skyshards.

My VR7 has 5 Professions maxed out. I don't feel like I'm losing anything from my main abilities doing that.

I guess it's because in ESO you are so limited by the number of active abilities you can have on your two bars anyway + passives.

Mind you, I have farmed up every Skyshard in the game from my base area + Cadwell's Silver so I had a lot of points to burn. I haven't even gone through Cadwell's Gold + Cyrodill yet to get the rest.

There's over 300 Skill points you can acquire in this game which is a HUGE amount. I'd daresay there's absolutely no reason at all why you cannot max out every profession in the game on one character and still have more than enough skill points left over to do everything you want on your main.

All can be done. I struggle with 3 per char (but I definitely distribute too many skill points in skills I only occasionally use...).

If you want to retain a certain flexibility like doing different weapon setups or different roles (which can be done still), and not have to run to the shrine every time you want to change something around, limit yourself to 2 or 3 crafts. Alchemy and Provisioning can be taken to 50 in a couple hours and the equipment crafts take a couple days. Even less if you stockpile materials of all levels before you start.

I would suggest starting out with enchanting, if you want to have it, and in addition the craft that will provide the majority of your armor since that gives you 7 slots minimum to use with sets. If you want to skip enchanting, use two equipment crafts. that way your motifs get double use.

Level your char, stockpile materials for the other crafts, once you reach ~200 skill points, decide on whether you have excess for a third or even a fourth craft, then power level it quickly.

Just make sure that you have one char that learns all traits, motifs and has the minimum skills for the three equipment crafts (9/9 respectively 10/10 for the craft level and possibly 4/4 research perk. you can do refining and improvement on another char, if you have a twink. If not, you will also need 3/3 in both of these for all three crafts, bringing it to 57 (60 with 2.1 update) skill points in total spent in crafts).

Same as others, all professions on my main char, v14.

But you'll need to do all skyshards, all dungeons, and do a little bit of pvp to earn skill points from pvp ranks.

I currently have 5 skill points free, they're for new craft tiers. (they'll require 6 points in fact).
IC will add 4 skyshards skill points, 4 dungeons skill points and 2 vetrank skill points.

PS: I've unlearned some craft things, because I don't need them anymore. 12 skill points for research (did all). for observation, I got rank 1 in alchemy, wood, clothing and smithing. 0 for enchanting, they're pretty easy to see.

I'm templar and I'm tanking/healing and dpsing quite well. (vet & raid). all passive in light/heavy/class/staffs and got all the skill I need, even thoses I don't often play with.

With the 10 more skill points I'll have with IC,
I'll need 6 more for the last pvp skills (I'm only assault/assistance rank 9) and for war horn which I didn't unlocked yet.
1 point in legerdemain, for last stealth bonus I didn't unlocked yet, and I'll have 2 remaining points I don't know yet where to spent on.

I actually unlocked 299 skill points. With IC, it will be 309.

Get all craft on a single char isn't so hard, but on your main char is pretty hard. It will require a lot of time and wise choices when choosing skills

With the skyshards in Cyrodiil, the extra skill points from group dungeons and good planning one can easily have a very competitive character and have 4 crafting profession's maxed. That's competitive in PvP AND PvE.
Or one character that is pretty dang squishy do everything.

I'm vr13 and have all crafting maxed and a vamp and do dps in pve and pvp with no problem. I have 230 skill points or so and have all the skills and things that i want. It is possible just depends on what you want to do.

You can do all 6, it just takes planning and patience. You can only have 10 skills and 2 ults active, and you only need a few auxiliary skills in addition. I have all 6 professions maxed along with way more than 12 skills and their passives learned. I have 30+ points unused, and still need most dungeon and PVP skill points. There are enough skill points available to learn as many professions as you want and still be effective in combat.

im a vampire, master crafter in everything almost all the passives just missing the ones to see the runes because you really don't need that, and i do pretty well with a lot of passives a lot of skills, and still have 15 spare points, so you can max out all crafting just need to collect all the sky shards

You can do all but lately I have run low on skill points.
I have maxed all crafting on my main but with Emp passives (soon to be returned) Justice Skill Line, now I'm Vampire again I have run low.
I respected and have 297 skill points and believe it or not I ran out.
I'm probably short a few skill points as well, not sure what the max is, maybe 350?
I recently passed Enchanting and Cooking to my a couple of alts.
