So I just went on a guild trader run to buy some ingredients to level my provisioning skill, and the majority of them only had purple juice and stacks of white meat, if anything at all. Oh, and one trader had a carrot for 100k. Is this normal? No money in selling a variety of provisioning ingredients?

And there's always the grocer in Grahtwood in the north at Redfur Trading Post that sells every non-purple food item for only 10gp per piece. There's one in every alliance but I can't remember where the other two are right now. So it becomes pretty cheap to just buy stacks from her, grind out piles of green and blue food, and sell the results back to her. Yeah, it still costs but it beets, er... beats, paying 100K for a carrot.
