How Does Stacking Work, Exactly?

I see people taking about stacking all the time, whether it's potions or enchantments, etc. What kind of stuff does and doesn't stack? I've just always assumed that foods and drinks don't stack, and enchantments on armour don't stack with some abilities.

Food doesn't stack with drink. Major buffs don't stack with the same name Major Buff. Major buffs do stack with the same name minor buff. All traits and enchants on armor stack.
