In order to find you're best option is to run around the mountain areas. Both ore and runes can be found around these areas. Runes are a little easier to spot since they glow, but even ore just takes a keen eye most times to spot.

In order to craft other styles, you need to get the Motif for that race type. Either by random drop or purchase

I've found the best places to rack up a lot of Iron Ore and Runes(and Maple) is to explore the regions of Stros M'kai/Betnikh, Khenarthi's Roost or Bleackrock depending on which alliance you start in. I've gone back to those a couple of times to beef up my supplies of raw materials. Also Keen Eye is a god-send, a very handy set of skills to have.

It seems this Community is as great as this game is, just like The Secret World, those are probably the 2 best MMOs with the 2 best Communities !

I just spent most part of my morning exploring, running around, mining ore and extracting runes, I even found a Skyshard I forgot about, gained 1 Skill Point and used it to urpgrade my Crafting skills
And now that my Crafting skills have improved, I have another question for you : is the "level" of the Runes we find dependant of the "level" of the place we are ?
What I mean is, in Bleakrock I found basic Runes (and Ore), but if I want to get some green lv.2 or blue lv.3 ones, do I have to look somewhere else maybe ?

I really don't mind exploring, Tamriel feels so alive and breathing, I don't know how they did it, it's just a lot of little things that add up I guess, but this game world feels so "realistic"

cloth, ore and wood go by the region; I'm still confused on runes, because the other day I found a purple (level 3 I think?) on the starter island, and have found purple and gold in the first two areas after starter (for DC, this is glenumbra and stormhaven.)Alchemy seems to just be everywhere, although the water will change in quality with the region/area.

If you're in the Daggerfall Covenant, there's a wayshrine a little bit north east of the first town (sorry, I'm still too noob to remember names). Searching around the general vicinity of that wayshrine provides iron ore, jute, and maple, as well as some wolves, sheep, and deer that are easy to deal with that can give rawhide scraps. There's also the occasional rune here and there, but I've not really been looking for them as they're taking up inventory space and I'm still not sure what to do with them.

It might just be a coincidence but it seems that the amount of resource spawns is tied to the amount of players in the area.

Probably not a coincidence. Runescape has a similar system. Respawn times of resources are reduced if there are a lot of people on the server in order to increase the chances of other players getting resources that high levels "steal" (eg. high level miners can mine low leveled ore in a split second, whereas low level miners take 5-10 seconds). It helps to reduce the frustration and increase the fairness of gathering in an MMO.

Here are some general and specific raw material hunting rules:

1) Get off the frigging road. Got to the mountainous, forest-y or otherwise barren places to look.
2) Keen Eye perks are always a good investment of a few skill points.
3) (Ore Specific) You will very rarely find ore just sitting there, find a mountain and walk around the base of it, you will come across 3-6 bits of ore if it's big enough.
4) (Rune Specific) Look around the outside of ruins, although they do appear randomly throughout the world they are very common here.
5) Explore. Any of the beginner locations (including the small islands you travel to via quest) are hives for ore, wood and runes. Although in the starter area's you will only be able to get Maple wood, Iron ore and basic runes. You will need to mover further away if you hope to get stronger materials. And you should be gathering stronger materials by about level 14-17.

But now I've got another question : what do I do with all of my Iron Ore & Lingots ?
I guess I cannot refine them and turn them into Steel, so ... what can I do with them now that I'm using Steel to craft my weapons & armor ?

If you plan on alt characters, keep it in the bank for them to have a nice starter amount.
