I'm not sure if horses are still bugged and only showing 2 out of 3 of the graphics when leveled up.
As someone who has actually put armor on a horse for jousting the key is to stay out of the horses range of view. The perfect spot to start is right behind the left front leg of the horse and work your way back and then switch sides and do the same. for the head piece you actually can put blinders on the horse to make it easier. That's how I would do it.

That's pretty awesome. I do volunteer work at an animal shelter. What I do is I go and give all the nice dogs baths and bring them to this assisted living facility so the residents can have time with the dogs. Both the dogs and the people seem to enjoy it.
