Kind of a newbie needs help picking race/class

Hey guys, I need your advise. I've started about four times now but nothing feels right so far. Granted, might be because I'm underdeveloped but... man, it sucks. I'm just obsessing over min/max stuff or at least "good" combinations. It's just how I am. So here's the deal: I love Redguards, Dunmers, Bosmers and Bretons. Are these four classes good/competetive in terms of min/max or are they meh? (Compared to Imperials, who I've read seem to be just bitchin'!)
What classes are good for those four races? And what roles would be best for them?

Dunmer as a DK does insane fire damage,
Redguards/Bosmers for ANY stamina build
Bretons for most Magick builds.
