1. I find a lot of the end game dungeons to provide a decent challenge, at least until you become very geared and skilled at the fights. There are 3 trial and 1 "arena" type trial, each with its own hard mode version. There are also a lot of veteran dungeons. There is only 1 megaserver, and PvP is only allowed in Cyrodiil. Right now PvP is limited to zerg (large scale battles) with various little 1 v 1's here and there since it's open world, but with Imperial City coming in just a few months this is very likely to change.
2. I agree with you, the combat felt horrible during beta. It feels much, much better now.
3. The answer to this question sort of goes along with my answer to number 1. The game is not ridiculously hard that you have to min/max to succeed. You may be slightly less powerful than someone who does min/max, but all the content can be done successfully with nearly any build.

How about race-choices? I read in another topic that nord-sorcerer is a "bad" combination. Does the race-passives really affect it that much?
Also, about tanking and healing, will people in a group expect the templar to always heal and the dragonknight to tank, or can other classes hold these roles decently as well?
