So I'm new to ESO and was looking for which class would fit me best. I was looking to solo most pve, but was looking to doa good amount of pvp as well. Any input would be nice.
There is a complication in answering that question as you can be also weapon specific builds linked to armor specific builds as well as a class.
My current experiment is to 2 handed DPS a nord (stamina build) with medium armor and a templar class (purely for a single self heal, not to level anything else in templar)
The ranged dps (spells or bows), melee dps, healer and tank classes don't apply as clearly to ESO
If you match the attributes to the build you can pay less attention to the class, however if your intention is to max-min for end game and Trials class choices AND racials become important.

What @nobertpaulb16_ESO said is true. There's enough variety in the way to play and build each class that it's almost impossible to answer that question.
What helped me when I was starting was reading and watching build guides to have some idea of what I could do. Here's a good source for that.
Seeing what works for most people can be a good guide to what to do yourself. Still, the only way to determine what you'll enjoy is trying them out. Don't be afraid to experiment though, as you can at any time reset your skill points and points spent on health, stamina and magicka if you have enough gold.
