I'm gonna rock probably full heavy armor tonight because I have some health boosts on that but what armor setup do you run? Like 5 H 2 M? Or something like that?

7 Medium if you are going Stamina. Medium Armor has specific passives that stack based on how many pieces you are wearing. It also has Stamina related passives as well.
There's no point deviating from that setup right now, later on you can weigh up the pro's and cons of a passive like Undaunted Mettle using 5M/1H/1L but you're nowhere near that point yet.
