Is depositing and withdrawing from the bank the only way to split stacks on the console version? I'm trying to list a bunch of food on a guild store but it always lists the full stack. Only thing I can modify is the price for total stack. I see no option to split the stack before selling.

Try this before you open the store interface. Select the item and see if there is a sub menu (how to get to that I am not sure), the choice to split should be there. Once you find the command, you can do this while the Store interface is open.Enjoy the game, life is what you really want to be worried about.
